Shrimp Soup

In Portuguese: Sopa de Camarão


  • 500 g small shrimps
  • 1/2 l water
  • 2 soupspoons margarine
  • 3 medium-sized tomatoes
  • 2 large onions
  • 1 coffeecup white wine
  • 2 soupspoons olive oil
  • 2 soupspoons corn flour
  • 1 bay leaf
  • 3 grains pepper
  • salt


In some water, boil the shrimps with the bay leaf, the onion and the grains of pepper. Skim away the foam collected on the boiling water.

Skin and put aside the shrimps.

Pass the water through a fine sieve, grind the shrimps’ heads and pass them together with the onion through a sieve, into the already sieved broth.

Add the skinned and seeded tomatoes and the fats, and cook on a low fire.

In a bowl put the corn-flour.

Add little by little, spoonfuls of broth, till you have obtained a thick sauce which will all be added to the pot, to thicken the soup.

Add the shrimps, verify the seasoning, so that it will be pungent.

Serve in bowls.

In each bowl place some fried bread, cut in squares.
