Leg of Lamb with Smoked Ham

In Portuguese: Perna de Borrego Recheada com Presunto


  • 1 leg of lamb (without the bone), aprox. 1 kg
  • 100 g “presunto” (smoked ham) in slices
  • 2 dl white wine
  • 3 cloves garlic
  • 1 onion
  • 2 bay leaves
  • 1 bunch of parsley
  • 1/2 tablespoon paprika
  • 2 tablespoons oil
  • salt


Open the leg of lamb in the middle.

Prepare a marinade with white wine, crushed garlic, salt, bay leaf, parsley, onion slices, paprika, and a little oil.

Then soak the meat in this marinade for about 2 hours.

Stuff the middle of the leg with the smoked ham and fold it in such a way as to make a roll, then tie with string to hold it in place.

Roast in a hot oven for around 45 mins with the potatoes.

When the meat is done, remove the string and cut it in slices to serve.
